SPRING ROLLS A' PLENTY

We had a wonderful evening of Cooking 101 at Joanne Poulsen's home this evening. Wendie Ke, taught us how to make Chinese Spring Rolls. They are made with water softened Rice Paper, which is filled, much like you would fill a burrito, with the most incredibly healthy ingredients. They are very easy to make and so light and delicious. They would be a lovely summer meal.

She also made two delicious sauces to dip them in. One a hot sauce, you mix with 7up, and the other uses peanut butter, coconut water and Hoisen sauce.
We ate Spring Rolls till we popped, and several sisters made one to take home to their husbands. The recipes will soon follow in a blog by Sister Wicker - so check back!
